Maison Kuro opened in 2024 with one idea: that Edomae sushi — the disciplined, vinegar-forward style of old Tokyo — could be done properly here, using fish from our own coast instead of flying everything in frozen.
Ten years at a three-Michelin-star counter in Ginza, followed by a decade travelling the Atlantic and Mediterranean coasts studying local fish markets. Chef Aoki settled in Casablanca in 2023, drawn by the quality of the catch coming out of the port and by a city willing to take sushi seriously without needing it explained.
He works the counter himself, six nights a week.

Three commitments that shape everything on the menu.
Sea bream, langoustine and octopus come from Casablanca's own port. We only import what genuinely can't be matched locally — bluefin, uni, eel.
Shari is seasoned twice daily with a red-vinegar blend aged in-house, and served at body temperature, the way Edomae tradition insists.
Twelve seats means every plate leaves the counter under the chef's direct eye — no expediting, no line, no compromise on timing.
